CAFE DE OLLA
1 Litre water
2 Tablespoons freshly ground coffee (or more if you like strong coffee)
1 Stick cinnamon
2 Tablespoons dark brown sugar
5 Whole cloves
Rind of ¼ organge
Heat the water and add all the coffee, cinnamon, sugar, cloves and orange rind.
Bring to the boil and remove from the heat.
Leave to rest for about 2 minutes so the flavours can develop.
Taste and add more sugar if required (it should taste fairly sweet).
Pour through a fine sieve into an attractive coffeepot. Serve in a clay cups.
Do not add cream or milk.
