ENSALADA DE NOPALES

Cactus Salad

Serves 6

2 Jars Nopal Cactus san marcos . Rinse in water & drain.

2 Tablespoons olive oil (Optional)

4 Teaspoons mild vinegar or fresh lime juice

3 Tablespoons finely chopped white onion

Salt to taste

1 Tablespoon dried Mexican oregano

¼ Cup roughly chopped coriander

 

Rinse the Nopales well with water & mix all the salad ingredients. Serve & Enjoy.

 

Serving suggestion:

Lettuce leaves

A few strips of sliced Jalapeno chiles.

Garnish:

115g Crumble cheese or Fetta Cheese

1 Small purple onion, sliced

2 Medium tomatoes sliced

 

Line the dish with the lettuce leaves, add the Nopales salad recipe as above and Garnish with the rest of the ingredients.
